I have not posted in awhile… but this recipe was too good not to share! I have been spending a lot of time 
researching and learning about health and nutrition, and making healthy food for my family. I will post more about what I’ve learned later!
So… I’ve decided that coconut flour is my new favorite thing. It is gluten free, and high in fiber and protein. It’s not even a grain… it’s coconut - which is sooooo good for you! These muffins turn out light and fluffy, and can be a whole meal in themselves!
Ingredients:
- 1/2 c. coconut flour
- 1/2 tsp. sea salt
- 1/2 tsp. baking soda
- 6 eggs
- 1/3 c. honey
- 1/3 c. melted coconut oil
- 1 Tbsp. vanilla extract
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1 c. grated zucchini
- 1/4 c. raisins
- 1/4 c. chopped pecans
Recipe:
- Pre-heat oven to 350 degrees
- In a large bowl, whisk together eggs, coconut oil, honey, and vanilla extract
- Add to the egg mixture the coconut flour, salt, baking soda, cinnamon, and nutmeg
- Fold in grated zucchini, raisins, and pecans (I run all three of these ingredients through my food processor. This ensures that it’s all small enough for my toddler to eat!)
- Pour 1/4 c. batter into each greased muffin tin (or use muffin cups)
- Bake for 25 minutes
This recipe yields 12 muffins.
Spread liberally with raw, grassfed butter, and enjoy! These will freeze well also!
